EAST MEETS WEST IN A SPECTACULAR CUISINE FEST
Ho Tram, 29 October 2016: The kitchen geniuses of The Grand Ho Tram Strip have been hard at work once again for the Episode 3 of the resort’s acclaimed pairing dinners. This time around The Grand’s Executive Soux Chef Raymond Bok has cast his eyes over the East Sea to Hong Kong and developed a fusion Cantonese menu that diners at the 29 October event will never forget.
Dubbed the “Exquisite Cantonese Fusion Wine Dinner” and held at The Grand’s Jù Băo Xuān, the six course feast sees Chef Raymond team up with Master Sommelier Jean-Bernard Baudron of Ho Chi Minh City wine institution, The Warehouse.
“Jean-Bernard and I have been developing this menu for months now, and while our names may be all over it, the real stars of the evening will be the cuisine and the wines on offer. We will be showcasing the finest in traditional Cantonese cooking styles and delicate plating and presentation, and pairing that with a wine varietals from France, South Africa and the USA. We have choreographed an exciting dance for the palates of our diners, and simply cannot wait to present it to guests on the night,” said Chef Raymond.
With two decades of experience in Chinese cuisine, the widely accoladed Chef Raymond has had a career that has seen him ranked 7th in the World Championship of Chinese Cuisine (Singapore 2012), take out the Gold Award in Huo Yew Cook’s Association Singapore (Team Category) and win another Gold Award in Best Dish –Soup & Seafood Hot Dishes (Individual Category).
The night will bring to diners a feast featuring three kinds of delicious canapes. A combination of three types of dimsum follows that. Next up is the Double-boiled ox tail and black chicken with wolfberry carrot soup. The culinary procession kicks into high-gear when the Oven baked Cod fish with black pepper soya sauce, the Roasted pigeon with Chinese BBQ sauce, and the deep-fried fesh egg noodle with fresh crab claw and black truffle in sauce are presented. The meal is rounded out with a dessert of deep-fried ice cream and rice dumpling stuffedin chocolate with foie gras.
The Grand Ho Tram Strip is Vietnam’s first truly integrated resort.
